A delicious and nutritious go-to-recipe when you want something light and quick
Miranda began training as a chef at age 16, when she enrolled in culinary arts school. Eventually she became disillusioned by food waste in the food industry and turned to other professional pursuits. Still, she enjoys preparing meals and happily shares her favorite recipe for those of us who, like her, sometimes want to make something light and quick.
Ingredients
- 1 c. lentils (whole, dry)
- 2 c. water
- 1 can organic coconut cream or milk (no sugar added)
- 1/4 c. onion
- 1 garlic clove
- 2 T curry powder
- 1/2 tsp black powder
- 1 tsp Himalayan salt
- 1 bay leaf
- 1/4 tsp chili flakes
- fresh parsley (chopped as garnish)
- fresh scallions (chopped as garnish)
- sprink with sesame seeds
Spices/herbs
- curry powder
- black powder
- Himalayan salt
- bay leaf
- chili flakes
- fresh parsley
- fresh scallions
- sesame seeds
Directions
- Combine all ingredients in sauce pan
- Cook until lentils are tender (follow cooking instructions on lentil package)
- Stir occasionally, adding small amounts of water if necessary
- Remove from heat and let stand for 5 minutes
- Place into bowls and garnish with fresh chopped herbs and sesame seeds
- Serve and enjoy!
- NOTE: Make side salad of choice and serve with bread, if desired
