2 cups pumpkin cubed with skin
1 cup almond milk
1 tsp thyme
1 tsp oregano
2 tbsp Goji berry/ wolfberry (add it just before serving)
1/2 tsp turmeric powder
a pinch black pepper
1 tbsp ground flaxseeds/ chia seeds
Spices/herbs
Thyme
Oregano
Tumeric
Black pepper
Directions
- Steam cubed pumpkin for 10 minutes
- Place pumpkin in blender with almond milk and rest of the ingredients
- Blend until smooth
- Garnish with Goji berries
- Serve warm and enjoy this healthy soup
