Banana bread
Bananas are among the most important food crops on the planet. They are a healthy source of fiber, potassium, vitamin B6, vitamin C, and various antioxidants and phytonutrients. Walnuts provide healthy fats, fiber, vitamins and minerals, and they are heart healthy. They have higher antioxidant activity than any other tree nut, promote a healthy gut, discourage the buildup of plaque in the arteries, and can help reduce inflammation. Studies also show they may help lower blood pressure. A single one-ounce serving of walnuts provides 4.8 grams of protein, 7% of your daily dietary fiber, 11% of the magnesium needed daily, 4% of the iron, and 10% of vitamin B6 we need for good health.

- 1 c Wholemeal flour
- 1 tsp ground cinnamon
- 1 pinch salt
- 1 tsp vanilla extract
- 1 hanful raisins
- 1 handful chopped walnuts
- 1 apple
- 3 ripe bananas
- 2 oz plant milk (60 ml)
- 1 tsp bking soda
- 1 tsp baking powder
- 70 ml coconut oil
- 1 handful pumpkin seeds
Instructions
Preparation
- Chop the walnuts into big chunks
- Wash the apple and cut it into even slices of about 1/2" - 3/4" (1-2cm) thickness
Directions
- Mash bananas with a fork
- Combine mashed bananas with plant milk, vanilla extract and coconut oil and mix it well
- Combine wholemeal flour with chopped walnuts, baking powder & soda, pumpkin seeds, raisins, ground cinnamon, and salt
- Mix everything together
- Put the batter into a baking form
- Add apple slices and leave even gaps in between
- Bake in a preheated oven at 350° F (180 °C) for about 50 minutes or until golden
